A 35 Year Old Caol Ila from a single refill cask (#5773) - the first release of a new style at the time, this particular cask was recovered after initially being sold. Mild in aroma, it is rich in texture with a long smoky-spice finish.

"This Caol Ila is very special to me because of work I was part of before it was distilled. The early eighties were a time of great change on Islay, and knowing that Caol Ila was prized by whisky lovers we worked hard to bring even greater harmony to its flavours.
This release comes from a single refill butt filled soon after our work and once ready, it found an eager buyer. That might well have been that; as the last exemplars of that special time, mature casks from 1984 are vanishingly rare today. But just as our customers had pursued this special cask, so did we. We never gave up hope and some years ago, knowing what a treasure we had lost, we bid successfully to recover it. This time, we put it aside until perfection matched rarity....
It has been a quiet ambition of mine to finally savour this dram. Mild in aroma, it is smoothly rich in texture then big, bold and smoky in taste on the outside, while deep within a rich, fruity sweetness and salty savouriness combine to suggest sweet-glazed meat roasting on the barbecue. With a long, smoky-spicy finish, this is truly a whisky with soul, one of a kind, and one I am proud to share."
